About Reduced
REDUCED was founded in 2020 by William Lauf and Emil Munck in a joint mission to reduce food waste by converting surplus raw materials into flavorful, high-quality products.
We utilize waste streams from the food and agriculture industry and use our W2T technology to extract taste and umami from raw materials.
Our laboratory and production facilities are in Copenhagen, where we continuously develop new products in close collaboration with our customers.

Product Categories
REDUCED produces products within four different categories, each addressing the customer’s needs depending on where in the cooking process there is a desire to add good taste.
Concentrates
All our concentrates are created as bases for soups and sauces in the professional kitchen. They are easy and versatile to use and typically constitute 50-70% of the final solution in diluted form.
Stocks
Traditional broths are made using the old-fashioned method, where ingredients are allowed to simmer for many hours to extract both flavor and texture, which can then be used in finer cooking.
Flavourings
Our range of flavouring products consists of concentrated umami sauces used as flavor boosters where there is a need to add umami and enhance the overall taste experience.
Culinary Soups & Sauces
This is our series of ready-made products that are ready to heat up and serve to guests. The products are based on our concentrates and are exclusively made from natural ingredients.
